Artichoke Spinach Cauliflower Bean Burgers

Here’s the recipe for a great alternative to the Beyond Burger that will help and not harm your health! Hint: Make a double batch and freeze patties for later use. You can grill or bake them. Enjoy!

Artichoke Spinach Cauliflower Bean Burgers

Ingredients

  • 15 oz can great northern beans or any other white bean, drained and rinsed
  • 1/2 cup oats
  • 33/4 cup fresh spinach
  • 5-6 ea artichoke hearts canned is ok
  • 1/2 tsp salt
  • ¼ to ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • 4 ea garlic cloves
  • 1/3 cup chopped red or white onion
  • 2 tbsp flax seed meal or Chia Seeds
  • 1 tsp Italian herb blend
  • ½ tsp onion powder
  • ¼ tsp cumin powder
  • 2 tsp prepared mustard of your choice I used spicy brown
  • 2 tsp fresh lemon juice
  • 2 tbsp nutritional yeast
  • ¾ cup small cauliflower florets I use ¾ cup of Cheesy Cauliflower Sauce
  • 1/3 cup chopped carrots
  • ¼ cup breadcrumbs oil free or oat flour or chickpea flour (I use chickpea flour)

Instructions

  • Preheat oven to 400
  • In food processor, process all ingredients through cumin powder until most of the beans are mashed. Move to a bowl. Add mustard, lemon juice, nutritional yeast and mix.
  • In food processor process cauliflower (if using raw instead of Cheesy Cauliflower sauce) and carrots. Add to the bowl and mix well.
  • Add breadcrumbs (or flour of choice) and mix until you have a soft and not too wet mixture.
  • Make patties with your hands by wetting them first in water (to keep mixture from sticking to your hands) and place on baking sheet lined with parchment paper.

Notes

Three cooking options:
1. Freeze for about 15 minutes. Grill for about 3-4 minutes on each side.
2. Par-bake and grill. Bake the patties for 20 minutes at preheated 400-degree oven. Grill 3-4 minutes on each side or put in refrigerator after par-baking until ready to grill.
3. Bake patties at 400 degrees for 20 minutes. Flip and bake other side for about 15 minutes.
