This holiday season, many of our neighbors throughout Chicagoland are suffering as a result of the Covid-19 pandemic, making it a struggle for them to put food on the table. In response to this crisis, Plant Based Nutrition Movement (pbnm.org) is organizing food drives to deliver healthy meals to our most vulnerable communities. Here’s how you can help:

Fill a brown paper bag with ALL these items needed to make our super easy, healthy black bean soup (recipe below):

  • 2 15-oz. cans of black beans (preferably low sodium)
  • 1 jar of healthy store-bought salsa
  • 1 quart low sodium vegetable broth
  • Unopened jar of ground cumin
  • Unopened jar of chili powder
  • Unopened bag of whole grain brown rice

If you are able to donate, we ask that you REGISTER at our Eventbrite page for the event so we can gauge the number of donations.

DIRECTIONS: From Meacham Rd, South of the Rt 90 expressway, turn West onto Tower Road and an IMMEDIATE right onto N Wiley Road. Take the 2nd driveway on the left (into the Meacham Business Park) and take IMMEDIATE right and follow to FIRST driveway and turn left. Unit 139 is about 2/3 of the way in on the left hand side.

 Three Easy Ways to Donate!

  1. Drop off. Simply place the brown bag in your trunk and bring it to Saladmaster Schaumburg, 1325 Wiley Rd.,
    Suite 139, on Sat., Dec. 5. All CDC protocols will be observed to ensure your safety.
  2. Pick up. Can’t make our drop off event? No problem! A PBNM volunteer will pick up your brown bag
    donation at your home. Please e-mail Sherry Shrallow, sherry.shrallow@gmail.com no later than Wednesday
    December 2 to arrange a pick up.
  3. Donate! Make a suggested donation of $20 or more and we’ll do the shopping for you! Just click here.

Black Bean Soup Recipe:

Ingredients:

  • 2 cans black beans
  • 4 cups low sodium vegetable broth
  • 1 cup store-bought salsa
  • 1 cup brown rice
  • 1 tsp ground cumin
  • 1 tsp chili powder

Cooking instructions: (Note: rice takes longer to cook, so best to start it first)

Beans:

  • Drain and rinse the 2 cans of beans.
  • Mash well and put into a soup pot.
  • Add broth and stir in the other ingredients.
  • Simmer on low for 20 minutes

Rice:

Cook the rice separately according to package directions.  Alternatively:

  • 1 cup of brown rice
  • 1 1/2 cups water
  • Bring to boil, cover, and reduce to low for 40 minutes
  • Remove from heat and let sit for an additional 10 minutes.

Once both rice and beans have been thoroughly cooked, add rice to the beans and enjoy!
