Throughout this holiday season, we know that many of our neighbors throughout Chicagoland are suffering as a result of the Covid-19 pandemic, making it a struggle for them to put food on the table. In response to this crisis, Plant Based Nutrition Movement ( was pleased to organize its first food drive to deliver health-promoting plant-based foods to our most vulnerable communities. We reached out to our wonderful, generous PBNM community to ask for help, and boy did the community deliver! As a matter of fact, they delivered a whopping 973 pounds of healthy, wholesome plant-based foods!

A team of PBNM board members and volunteers helped collect the food collected the food at Healthy & Happy Living in Schaumburgand caravanned to Lakeview Pantry in Chicago to make delivery. Thank you to Ewa Stankiewics of Healthy & Happy Living, Saladmaster, for the kind use of their facilities!

Kate from Lakeview Pantry was thrilled to receive all of our donations. Her crew helped us unload our fully-packed vehicles and weighed and crated our health-promoting plant-based foods. We’re delighted to report that our donations weighed in at 973 pounds!

All of the bags included the ingredients for the simple, tasty recipe below. If you’ve not had it yourself, give it a try. It’s quick, easy to make, filling, and delicious! Pantry clients will also be able to choose from the wide variety of other shelf-stable plant-based foods that PBNM donated, including soy milk, lentils, beans, canned vegetables, whole grain pasta, pasta sauce, seeds, and much more.

Black Bean Soup Recipe:


  • 2 cans black beans
  • 4 cups low sodium vegetable broth
  • 1 cup store-bought salsa
  • 1 cup brown rice
  • 1 tsp ground cumin
  • 1 tsp chili powder

Cooking instructions: (Note: rice takes longer to cook, so best to start it first)


  • Drain and rinse the 2 cans of beans.
  • Mash well and put into a soup pot.
  • Add broth and stir in the other ingredients.
  • Simmer on low for 20 minutes


Cook the rice separately according to package directions.  Alternatively:

  • 1 cup of brown rice
  • 1 1/2 cups water
  • Bring to boil, cover, and reduce to low for 40 minutes
  • Remove from heat and let sit for an additional 10 minutes.

Once both rice and beans have been thoroughly cooked, add rice to the beans and enjoy!
