Like many advocates of this lifestyle, Carol’s journey began as a personal one. Family health issues forced a focus on exploring solutions. Food as medicine became the clear path. But Carol brought her unique training, talents, and insights to bear in her decision to share her knowledge and help as many others as possible. Fiercely committed to guiding people to prevent the major cause of death in the U.S., heart disease, and the associated chronic illnesses of diabetes and hypertension, she blends her degrees in nutrition and nearly two decades of exploring solutions to help others regain their health.
Throughout her career, Carol’s approach to helping others heal through nutrition as been a multi-layered one, including
  • Moving beyond educating others about necessary dietary changes to re-build health to showing them how to achieve it by adopting nutritious plant based cuisine that is surprisingly delicious.
  • Understanding that any chronic illness is a family disease as well as a personal disease. In her personal life, she’s “walked the walk” and understands full well that, just as illness is a family affair, so is healing
  • Carol is skilled at taking theoretical knowledge and making it practical and usable for everyday living. And there is nothing more practical than food!
  • For those wanting to immerse themselves in the lifestyle, cooking and community of an ancient culture that promotes health and longevity, she hosts culinary trips to Italy. These trips allow individuals the unparalled experience of briefly living the healthy “Mediterranean Way of Life” and learning how to eat, love and live.

Carol received her undergraduate degree with honors at the University of WI and her Master of Clinical Nutrition at Rosalind Franklin University of Health and Science/The Chicago Medical School and her board certification from the Certification Board of Nutritionist Specialists.
Through her public speaking engagements, group culinary classes, lifestyle and longevity trips to Italy and private consultations she’s helped to teach hundreds of people about the power of dietary change.
