Reprinted from The Washington Post: The Biden administration on Friday announced more stringent nutrition standards for school meals, reviving efforts to improve the health of millions of public school students in the face of a staggering rise in childhood obesity and other diet-related diseases.
Childhood obesity is a growing problem all over the world. It is already a huge problem in the US. A childhood is considered obese when they have too much body fat based on Body Mass Index (BMI) measurements at the 95th percentile or higher. The American Academy of Pediatrics (AAP) estimates there are currently 14.4 million kids living with obesity in the USA.
Rachael J. Brown earned her plant-based nutrition certification and food and sustainability certification from the T. Colin Campbell Center for Nutrition Studies and eCornell. After being diagnosed with high cholesterol in her late 20s, she discovered The China Study and started exploring the science of nutrition. After she ate whole food, plant-based, no oil (WFPBNO) for just 17 days, her cholesterol dropped 50 points. That was the beginning of her family’s journey from the Standard American diet (SAD) to a WFPBNO lifestyle.
